Making Sake!

Sake, often referred to as Japanese rice wine, is a traditional Japanese beverage with a rich history dating back over a thousand years. The process of making sake is a meticulous and artful craft that combines science, skill, and a deep respect for tradition.

The journey of sake begins with the selection of high-quality rice, typically a special sake rice variety. The rice is polished to remove the outer layers, leaving behind the starchy core, which is essential for sake production. The fermentation can take anywhere from a few weeks to several months, depending on the desired sake type.

After fermentation, the sake is pressed to separate the liquid from the solids, resulting in a rough sake known as “moromi.” This liquid is then filtered, pasteurized, and sometimes diluted with water to achieve the desired alcohol content. The final product is aged for a few months to allow the flavors to mellow and harmonize.
